CARAMELIZED FRENCH ONION DIP

Ingredients:

2 Onion, finely chopped

4 Garlic Cloves, minced

2Tbsp Oil

1/4 Cup Balsamic Vinegar

1/4 Cup Brown Sugar

½ Tsp Salt and Pepper

½  Tsp Dried Thyme

1 Bay Leaf

1 ¼ Cup Sour Cream

1 ¼ Cup Mayo

Green Onions, handful chopped

Directions:

Heat oil in skillet. Add onions and garlic and cook for about 8-10 minutes until they start to caramelize golden brown.

Reduce heat and add vinegar, sugar, salt, pepper, thyme and bay leaf. Simmer about 8-10 minutes until it starts to thicken and reduce. Remove from heat and cool in fridge.

Once onion mixture is cool, add in sour cream and mayo. Mix in green onions. Serve.

WARM FETA ARTICHOKE DIP

Ingredients:

1 (14 oz) Can Artichoke Hearts, drained and finely chopped

5 Oz Feta cheese, crumbled

¾ Cup Mayo

½ Cup Grated Parmesan Cheese

1 (2 oz) jar Chopped Pimentos, drained

2 Tsp Garlic, minced

Directions:

Preheat oven 350.

In medium bowl, combine artichoke, feta, mayo, Parmesan, pimentos and garlic until combined. Transfer to glass pie plate and bake uncovered for 25 minutes, until bubbly an lightly browned.
