ALMOND CRANBERRY ORANGE BISCOTTI
6 Tbsp Butter, Softened
3/4 Cup Sugar
2 Cups Flour
1 Tsp Baking Powder
1/2 Tsp Cinnamon
1/4 Tsp Almond Extract
2 Tbsp Orange Zest
1/2 Cup Dried Cranberries
1/2 Cup Slivered Almonds
8 oz Dark Chocolate Candy Melts
Preheat Oven 350
In small bowl, mix flour, cinnamon and baking powder
In another small bowl, mix eggs, almond extract and zest.
In mixer bowl, beat butter and sugar until combined. Add egg mixture. Slowly add flour mixture. Fold in cranberries and almonds.
On parchment paper, shape dough into 12 x 5 inch rectangle. Place onto baking sheet.
Bake 25 minutes. Remove from oven. Using serrated knife, slice biscotti into 12 (1 inch) wide slices. Lay each slice on its side. Bake 10 minutes. Flip biscotti to opposite side and bake another 10 minutes. Remove and cool.
To garnish, melt chocolate and dip bottom of biscotti into melted chocolate. Set on cooling rack to dry.
HERB BAKED CHICKEN WITH POTATOES
2 Tbsp Red Wine Vinegar
1 Tbsp Olive Oil
2 Tsp Dijon Mustard
1 Tsp Italian Seasoning
1/2 Tsp Salt
1/2 Tsp Pepper
6 pieces (1 1/2-2 Lb) Chicken Thighs, boneless skinless. If you use skin, make sure you put skin up in dish.
Salt, Pepper, Tony’s Chachere, Garlic Powder (seasoning of your choice)
1 Tsp Olive Oil
2-3 Yukon Gold Potatoes, peeled and thinly sliced
1/2 – 1 Cup Shallots, diced
3-4 Garlic Cloves, sliced
Preheat oven 375.
Sprinkle both sides of chicken with seasoning of your choice.
In a small bowl, whisk together vinegar, olive oil, mustard, Italian seasoning, salt and pepper.
Spray 9 x 13 dish with cooking spray. Cover bottom of dish with potatoes. Sprinkle with salt and pepper. Sprinkle the shallots over the potatoes. Drizzle with olive oil.
Place chicken on top of potatoes and onions. Wedge the garlic in between pieces of chicken.
Whisk the dressing and pour over the chicken.
Bake uncovered for 50 minutes or until the chicken is well browned and cooked through.
You might need to remove the chicken, stir the potatoes and leave the potatoes in the oven a few more minutes to become tender enough.
